I made an adapted version of panch phodoner kaddu. I did not have all five usual seeds in my cupboard, (cumin, fennel, fenugreek, black mustard, black onion). So instead I part fried some: spring onion, red pepper, small green chilli, cumin and coriander seeds before adding the cubed pumpkin pieces. Then I garnished it with chopped spring onion.
I would try this again but use a regular onion at the start rather frying the spring onion.
You can find a plethora of other pumpkin suggested dishes on the
BBC Food website. Just search for ‘pumpkin’.
